The Stuffed Omelette is a very simple and light dish, thanks to the cooking in the Air Fryer, which allows you to reduce the use of oil compared to classic pan cooking. Ideal for a light dinner or to take to the office for a quick lunch break, it is also great for stuffing a nice soft sandwich. Also delicious in the version with fresh spring onions
The Stuffed Omelette is very versatile and you can vary the filling ingredients with other types of cold cuts and cheeses. I chose sliced cooked ham and thinly sliced brie cheese, and to make it even tastier, I added some marinated mushrooms, but they can also be replaced with artichokes or not add anything at all, it will still be delicious.
For the preparation, you will need to divide the ingredients into 2 bowls and start cooking the base with half of the mixture, then fill it and cover with the remaining eggs. This allows the filling to stay more on the surface and is useful for those with a fryer with only one resistance, in this way you will achieve even cooking, both below and above, without having to turn it over. The choice of baking tray is also important; avoid silicone and disposable aluminum trays, which would keep the mixture very moist and difficult to cook, opt for a non-stick tray.

Ingredients for 4 servings
- 6 eggs
- 0.7 oz Grana Padano cheese, grated (or Parmigiano Reggiano)
- to taste thyme (or other spices to taste)
- to taste salt and pepper
- to taste oil (to grease the pan and for the omelette surface)
- 3.5 oz cooked ham (sliced)
- 2.1 oz brie (sliced)
- 2.1 oz marinated mushrooms

Steps
Divide the omelette ingredients into two bowls with the same quantities, so 3 eggs per bowl, grated Grana cheese, thyme or spices of your choice, salt and pepper
After beating the eggs with the other ingredients, put the mixture from one of the bowls into a lightly oiled tray and spray a bit of oil on the surface
Cook at 340°F for 5 minutes, just until the mixture becomes solid
Remove the tray from the air fryer
Stuff it with slices of cooked ham, mushrooms, and slices of brie
Now pour the other half of the mixture you set aside. Spray a bit of oil on the surface
Put the tray back in the air fryer and cook again at 340°F for 10 minutes
Check that the omelette is cooked and golden on the surface
Transfer the Stuffed Omelette to a plate and serve it hot
