Sweet and Sour Meatballs in Air Fryer

These Sweet and Sour Meatballs cooked in an air fryer are fantastic!! The recipe is from my “Friend Friggy” Lidia, which I personalized a bit by enriching it with onion, raisins, and pine nuts. Meatballs are a classic meat dish, and I am sure you will love this tasty version.

I prepared the meatballs with mixed ground beef/pork and without eggs. I used two bell peppers and cooked everything, as always, in my kitchen ally Ninja Combi.

You must try them because they are delicious, at home they ask for them often, as with the version of Creamy Milk Meatballs, I always have to prepare them in large quantities because they are never enough!

Ingredients

What you need to prepare sweet and sour meatballs

  • 0.88 lbs ground mixed meat (pork/beef)
  • 2.12 oz stale bread
  • 1.41 oz raisins
  • 0.84 cup milk
  • to taste chopped parsley
  • to taste salt and pepper
  • 2 bell peppers (1 red and 1 yellow)
  • 1 golden onion
  • 3 tbsp white wine vinegar
  • granulated sugar (2 and 1/2 tbsp)
  • to taste salt
  • 2 tbsp extra virgin olive oil
  • 0.71 oz pine nuts

Steps

  • After washing and removing the internal seeds from the bell peppers, cut them into strips and transfer them to a baking pan along with a not-too-thinly sliced onion. Season them with just a little extra virgin olive oil and salt. Cook at 356°F for 23 minutes, stirring 2/3 times, and if necessary, add a little water.

  • While the bell peppers and onions cook, prepare the meatballs, starting with the stale bread: soak it, crumbled, with milk in a bowl (2 coffee cups), let it rest for 10 minutes. Put the raisins in a cup with warm water to rehydrate.

  • After resting the bread, do not squeeze it; add the ground meat, grated Grana Padano, salt, pepper, freshly chopped parsley, and a portion of well-squeezed raisins, keep the rest aside for seasoning.

  • Shape the meatballs and transfer them to the baking pan with the now ready bell peppers

  • Prepare an emulsion with vinegar and sugar in a small bowl or glass, and add it to the meatballs along with the remaining raisins and pine nuts. Mix and place the baking pan back in the air fryer, cooking at 374°F for 20 minutes, turning them 3/4 times to color evenly; add half a cup of water halfway through cooking.

  • Once ready, adjust salt if necessary
