Sweet and Sour Peppers in Air Fryer

Ingredients

Ingredients for 4 servings

  • 2 bell peppers (red and/or yellow)
  • 1 fresh spring onion (or Tropea onion)
  • 1.4 oz raisins
  • 0.7 oz pine nuts
  • 3 tbsp extra virgin olive oil
  • 3 tbsp white wine vinegar
  • brown sugar (2 and 1/2 tablespoons)
  • 1.8 oz pitted olives

  • 1 Cutting board
  • 1 Knife
  • 1 Peeler
  • 1 Hand whisk
  • 2 Small bowls
  • 1 Non-stick baking tray

Steps

  • Before starting, soak the raisins in a small bowl with warm water for 10/15 minutes to rehydrate them. Wash and dry the bell peppers and use the peeler to remove the skin

  • Split them and remove the seeds and inner filaments. Cut them into strips

  • Slice the fresh spring onion not too thin

  • Take the non-stick tray and add the ingredients, bell pepper, spring onion, pine nuts, olives, and rehydrated raisins, draining them well, and salt to taste

  • Prepare the mixture of oil, vinegar, sugar, a pinch of salt and emulsify with a hand whisk

  • Pour the mixture into the tray of peppers and mix everything well

  • Put the tray in the fryer and cook on the air fry program at 356°F for 20 minutes. Then, increase the temperature to 392°F and continue cooking for 5 minutes. Stir a couple of times and add a small cup of water if needed

  • Remove the tray from the fryer and let it cool

  • Your Sweet and Sour Peppers are ready. Serve them warm or cold to better enjoy the taste😍
