Ingredients for a Donut Mold 9 inch / 22-24 cm
- 2 1/4 cups all-purpose flour
- 1/2 cup potato starch
- 3/4 cup vegetable oil (your choice)
- 2/3 cup water
- 1 cup brown sugar (or granulated)
- 1 packet baking powder
- 1 pinch salt
- 1 lemon (untreated zest)
- 1 orange (untreated zest)
- as needed powdered sugar (for finishing)

Steps
Preparation of the Vegan Donut
Pour sugar, salt, and the zest of lemon and orange into a large bowl.
Gradually add the oil while mixing with the whisk.
Also add the water, pouring it in slowly and continue mixing
Incorporate the sifted flour, starch, and baking powder
Mix until a smooth batter is formed.
Meanwhile, preheat the air fryer to 320°F (160°C) for 2/3 minutes. Pour the batter into a previously greased and floured mold.
Level the surface and place the mold on the fryer’s rack
Bake or air fry at 320°F (160°C) for 37 minutes. Do the toothpick test; if it’s dry, the donut is ready. Otherwise, continue for another 2/3 minutes
Once cooking is complete, leave the donut inside for 5 minutes with the door ajar
Allow it to cool before removing from the mold and sprinkle with powdered sugar

Oven Baking for the Vegan Donut
Bake the vegan donut in a preheated oven at 355°F (180°C) for about 40–45 minutes.
Before removing from the oven, do the toothpick test: if it comes out dry, the donut is ready.
Leave it in the oven for 5 minutes with the door ajar and let it cool completely before removing it from the mold to prevent it from breaking.

Lemon and orange zest can be replaced with a packet of vanillin or a few teaspoons of vanilla extract, or you can use just lemon zest or just orange zest.
