Yogurt and Chocolate Chip Muffins

Yogurt muffins are soft treats enriched with chocolate chips. They are quick to prepare and wholesome. They don’t contain butter and are perfect for a healthy snack for little ones.

To prepare these muffins, I used berry yogurt, one of my favorites, but you can substitute it with any flavor you like. The batter is made from flour, sugar, vegetable oil, 1 egg, and grated lemon zest… you can imagine the aroma!

Eggs and yogurt should be at room temperature, so take them out of the fridge about an hour before. Put the chocolate chips in the freezer so they won’t sink into the batter. When I buy them, I put them in an airtight container and leave them directly in the freezer, so when I need them, I don’t have to wait. I added them both to the batter and on top. Cooking is done in an air fryer, but as I always say, you can bake them in a preheated oven at 350°F for 25/30 minutes, always do the toothpick test after 20 minutes to avoid them collapsing.

Ingredients

  • 1 container fruit yogurt (125g)
  • 1 egg
  • 75 g flour
  • 50 g potato starch
  • 3.5 tbsp vegetable oil
  • zest of 1 lemon (grated)
  • 1/2 packet baking powder
  • 1 oz dark chocolate chips
  • to taste powdered sugar
  • 70 g sugar

Tools

  • 1 Air Fryer
  • 8 Silicone Muffin Cups for muffins
  • 1 Hand Whisk
  • 1 Spatula
  • 2 Bowls

Steps

  • In a bowl, pour the egg, oil, yogurt, grated lemon zest and mix with the whisk

  • In another bowl, pour the flours, sugar, and sifted baking powder

  • Pour the liquids into the bowl with the flours, mix well and add some of the chocolate chips, keeping some aside for decoration

  • Spoon the batter into the muffin cups, not reaching the edge, leaving some space

  • Bake at 338°F for 22 minutes

  • Do the toothpick test

  • Sprinkle with powdered sugar and your yogurt and chocolate chip muffins are ready to be enjoyed!
