Today I offer you my version of Zucchini alla Scapece in Air Fryer, a typical side dish of Neapolitan cuisine, perfect for accompanying meat or fish dishes. A very simple recipe to make with few ingredients and incredibly delicious! If you follow my preparation tips, you won’t notice the difference from the “original” ones. The zucchini will remain dry, not greasy, and much lighter and more digestible, ideal for those who cannot eat fried food but don’t want to give up flavor and indulge in a treat!
The original recipe also includes garlic, sliced in the oil and vinegar emulsion, but not particularly liking it, I preferred to cut it in half and remove it after marinating. To further enhance the flavor of the zucchini, I cooked them in a baking tray with a clove of garlic in its skin.

- 4 zucchini (green or white)
- 3 tablespoons vegetable oil
- to taste salt
- 1 clove garlic (in its skin)
- 3 tablespoons extra virgin olive oil

- 8 leaves mint (fresh)
- 1 to taste salt

Steps
Start by preparing the emulsion, as it will begin to marinate and absorb flavor. Take a small bowl, cut the garlic clove in half, and add the olive oil, vinegar, chopped mint leaves, and a pinch of salt. Mix and set aside
Wash, dry, and trim the zucchini on a cutting board, removing both ends. Cut them into slices that are not too thin.
Transfer them to a baking tray with a clove of garlic in its skin and 3 tablespoons of oil. Mix well
Insert the tray into the air fryer and cook on the air fry program at 356°F for 20/25 minutes, stirring or shaking the tray 2/3 times during cooking
As soon as the zucchini are ready, remove the garlic in its skin and lightly salt them. While hot, transfer them to a plate or bowl, alternating layers of zucchini and the oil and vinegar emulsion, removing the garlic clove first. Continue this way until you finish all the zucchini and emulsion. Let them rest for an hour before serving
Add a few mint leaves, ground pepper if you like, and serve your Zucchini alla Scapece in the air fryer
