The recipe for Zucchini Muffins in Air Fryer is quick, simple, and delicious. A different way to make vegetables appreciated by the younger members of the family. To prepare these zucchini muffins you will need: 2 zucchinis, 2 tablespoons of flour, 1 egg, some cheese. To make them more appetizing I sprinkled the top with some Grana and breadcrumbs. Mix everything in a bowl, after grating and squeezing the excess water from the zucchinis, it’s really very simple.
Zucchinis are suitable for various preparations ranging from main courses to side dishes, unique dishes, etc. A very good dish with zucchinis is Pasta with saffron cream, zucchinis, and bacon or Baked Fusilli with pumpkin and zucchinis or a really appetizing side dish like Zucchini Salad.

Ingredients
- 2 zucchinis
- 2 tablespoons flour
- 1 egg
- 1.4 oz Grated Grana Padano
- to taste salt and pepper
- 0.7 oz fontal cheese (diced)
- 0.5 oz Grated Grana Padano
- to taste breadcrumbs
- to taste extra virgin olive oil
Tools
- 6 Cupcake liners silicone
- 1 Air fryer
- 1 Grater large holes
Steps
First, wash, dry the zucchinis and remove both ends. Grate them using a grater with large holes
Squeeze them well with your hands or with a cloth to remove all their water
After squeezing them well, transfer them to a bowl and add the flour, egg, Grana, salt, and pepper. Mix the mixture well with a spoon
With the help of a spoon, pour a portion of the mixture into the cupcake liners. If you are using aluminum ones you will need to lightly grease them and you can sprinkle with some breadcrumbs.
Place a piece of fontal or your preferred cheese in the center and cover with more mixture almost to the edge of the liner
Sprinkle the surface with grated Grana and breadcrumbs and drizzle or spray with some EVO oil
Place the liners on the rack and cook at 356°F for 15 minutes, lower to 320°F and continue for another 10 minutes.
Wait a few minutes before removing them from the molds and serve
Tips
Zucchinis are very rich in water, squeeze them very well or you will not achieve a good result. Silicone liners are very practical but tend to keep foods moist, which is why I lowered the temperature and continued for another 10 minutes, as the bottom was still a bit pale. Using aluminum ones might require a few minutes less. Check during cooking
