- 7 oz Almond Paste
- to taste Syruped Cherries
- 5 oz Dark Chocolate

Preparation of Almond Paste and Cherry Chocolates
To prepare these chocolates, you need to source some almond paste. If you can’t find it, you can substitute with marzipan or prepare it yourself with an equal gram mix of almonds and sugar.
Blend the almond paste in a mixer for about a minute, just to soften it.
Take the cherries from the jar and drain them of their liquid in a strainer.Take pieces of dough about the size of a small walnut, place a syruped cherry in the center, close the dough well, round it off, and form a ball.
Continue like this until the dough is finished.Melt the dark chocolate in a double boiler or in a bowl in the microwave for a few minutes. Dip each ball in the melted chocolate, cover well, and then place on a baking sheet lined with parchment paper.
Chill the chocolate and almond paste balls in the freezer for about 5 minutes. Once they have solidified, they can be served.
