- 10 Anchovies
- 2 Carrots
- 1 bunch Arugula
- 3 leaves Radicchio

Preparation for Anchovies on Mixed Salad and Croutons
To prepare the salad, start by cleaning the anchovies. I had the fishmonger do it; I bought them already cleaned, without heads and bones.
Wash them well under running water, drain, and store in the fridge.Meanwhile, clean and wash all the vegetables, cut the cherry tomatoes into pieces, peel the carrots and cut them into julienne strips, remove the long stem from the arugula and take only the leaves.
Put everything in a bowl, season with oil, salt, mix, and set aside.Turn on the oven grill.
Rub the bread slices with a clove of garlic, cut into small cubes, place them on a baking tray, drizzle with a little oil and some oregano, and put in the oven to toast for about 5 minutes, turning during cooking and adding the pine nuts almost at the end.
When they are nicely golden, take them out.Take a non-stick pan and cook the anchovies with a pinch of salt, very few minutes per side.
Arrange everything on a serving plate, place the seasoned salad at the base, add the anchovy fillets, bread croutons with pine nuts, drizzle again with a little oil, and serve.
