I love apple cakes; they feel like home, good and genuine, just like our grandmothers used to make. I have many versions on my blog, but this one is much richer and more delicious. I made it some time ago for my birthday.
The apple cake with jam and dry amaretti is a simple and stunning pantry dessert, a burst of flavors and aromas of orange, cinnamon, and amaretto, making it so irresistible that one slice leads to another.
The apple cake has a soft consistency with a slightly crunchy layer of crumbled amaretti, making it perfect for breakfast, a snack, or even as a dessert.

Steps for the Apple Cake with Jam and Dry Amaretti
Start by peeling the apples; you can use either red or yellow ones, cut them into slices and put them in a bowl with the lemon juice, a few tablespoons of sugar, and cinnamon, and let them macerate.
In another bowl, beat the eggs well with the sugar; you can do this with a spoon or electric whisk, then gradually add the yogurt, grated zest, oil, and finally, sifted flour and baking powder.
Transfer the mixture to a greased and floured 9.5-inch pan, add the 4 tablespoons of orange marmalade, spread well, crumble 4 amaretti, and then decorate with the apple slices arranged in a circle.
After arranging the apples well, crumble the remaining 4 amaretti over the entire surface and the other tablespoon of sugar. Bake the cake.
BAKING
Transfer the pan to a preheated oven and bake the apple cake at 350°F (fan-assisted) for about 30 minutes or 40-45 in a static oven.
The baking time always depends on your oven’s power; you can judge by eye when to remove it.
The cake should be well-baked and golden on top; let it cool before removing it from the pan.
When it’s cold, slice and serve the cake with a bit of powdered sugar. As someone who loves simple things, I made it for my birthday and blew out the candles!
Storage and Tips
The apple cake keeps for about 3 days in a cool place under a glass dome.
You can use the variety of apples you prefer or replace them with pears.
