Place the skewers of meat rolls on a non-stick baking tray and then put them in a preheated oven.Cook the meat rolls with the oven grill or on an electric or stove-top griddle for about 15 minutes, turning on both sides for even cooking, and leave them until they are nicely golden brown.
The cooking time depends on the power of your oven.Meanwhile, prepare the salmoriglio while the rolls are in the oven.
In a small bowl, add some olive oil to taste, lemon juice, oregano, chopped parsley, thyme, minced garlic, and a pinch of salt, mix and let the emulsion infuse.When the oven rolls are cooked, plate them and dress with the salmoriglio, complete and accompany the dish with a fresh green salad.
