Baked Pasta with Potatoes and Broccoli

Baked Pasta with Potatoes and Broccoli is a very tasty and flavorful first course, mainly consumed in the autumn-winter season. It’s a fairly economical recipe accessible to everyone, with a few simple ingredients for a dish full of taste and flavor but also very complete from a nutritional point of view.

The picture doesn’t do it justice, but it is truly appetizing, the slight cheese gratin adds an extra touch of flavor!

It’s a simple and genuine vegetarian recipe with fresh seasonal broccoli, harvested from my dad’s garden, and good extra virgin olive oil, which has seasoned this dish making it even healthier.

I used Frantoio oleario bitontino Minenna, a delightful tasting and smelling Apulian oil.

Ingredients for Baked Pasta with Potatoes and Broccoli

  • 14 oz Broccoli
  • 2 potatoes (medium)
  • 1 onion (small)
  • 3.5 oz Provola
  • 1.75 oz Grana Padano PDO (grated)
  • as needed Olive Oil
  • as needed Salt
  • 9 oz Penne Rigate

Preparation for Baked Pasta with Potatoes and Broccoli

  • Peel the potatoes and the onion, then wash everything well including the broccoli.
    Take a pan, add the chopped onion, the diced potatoes, and olive oil as needed. Sauté everything for a few minutes, add 2 glasses of water, and let it simmer for about 5 minutes.
    Then add the broccoli florets, season with salt, and continue cooking for about 10 minutes, adding more water if necessary.

  • In the meantime, cook the pasta in a separate pot with salted water, leaving it al dente. At the end of cooking, drain and mix it in the pan with the broccoli and potatoes.
    Dice the provola cheese and add it to the pan with the pasta. Also, add some grated Grana Padano, mix everything well, and then pour into a baking dish.

  • Drizzle the pasta with broccoli and potatoes with a little olive oil, sprinkle with the remaining grated cheese, and gratin in a preheated oven at 392°F for about 10 minutes.
    Once cooked, take it out of the oven and serve the baked pasta with potatoes and broccoli hot and melting.

Tips and Variations

For this recipe, you can also use other pasta shapes: rigatoni, mezze maniche, or others.
You can use either common broccoli or Romanesco broccoli.
