Bread crostini with oil and herbs are delicious snacks, flavored with oil, garlic, and oregano, they are so good and crunchy that one leads to another.
The crostini are made with stale bread, this is a way to recycle it, they are cut into small cubes then drizzled and seasoned with oil and herbs, then the oven toasting makes them very crunchy and fragrant.
The crostini can be nibbled on their own as a snack but are also perfect for appetizers, or to accompany simple dishes like soups, broths, creams, and even more substantial salads.
For the preparation of the crostini, use the bread you have at home; I used slices of homemade bread that I make with sourdough, indeed, you can see the darker color of the flours, but baguettes, loaves, or sandwich bread can also be used.
You can flavor the crostini with other herbs too, like rosemary, paprika, whatever you like best.
Also excellent are the mixed bread bruschettas with tomato.
They are very simple to make, so do not waste the leftover bread but recover it this way, make a lot because they are so delicious that they disappear in an instant!

Mix everything well to flavor the crostini well, then transfer the tray to a preheated oven.
If you don’t like garlic pieces, you can rub them on the slices before cutting them into cubes, so they only take on the scent. You can also flavor the crostini with fresh or powdered rosemary or other herbs to your liking.
Toast the crostini in the oven at 392°F for about 10-15 minutes, turning from time to time. You can also toast them in a pan, over low heat, turning them continuously until they are well crunchy and golden.
Take the crostini out of the oven when they are well colored, serve them both hot and cold.
Anna recommends…
If the crostini are well toasted, they can be stored for several days in a closed jar to prevent them from losing their crunchiness and used when needed.
To use stale bread, you can also prepare the flavored breadcrumb mix for breading or fillings.
