Preparation for Christmas Stars with Pistachio and Hazelnut Cream
In the stand mixer bowl or a bowl manually, work the softened butter at room temperature with the sugar until it forms a cream. Continue working, adding the eggs, the flavors, and finally incorporate the flour with the baking powder. Quickly work the dough, wrap in parchment paper or cling film, and refrigerate for about 30 minutes.
Take the dough from the fridge and roll it out with the rolling pin. Use star-shaped cutters to make many shapes, one whole and one with a center cutout, to join them at the end. I used a large cutter and a very small one for the center cutout.
Place the stars on a baking sheet lined with parchment paper and bake in a preheated oven.Bake the cookies in a preheated fan oven at 356°F (180°C) for about 12-15 minutes, adjust according to your oven’s power to remove them earlier. The cookies should be just golden, then take them out and let them cool.
Take the pistachio and hazelnut creams and place a teaspoon in the center of each star, alternating the flavors. Spread on each cookie and then close with the other stars with cutouts, but first sprinkle with powdered sugar.
Complete the cookies with chopped hazelnuts and pistachios, place on a beautiful tray, and serve.
Tips and Variations
