Cod or Salted Cod Fritters

Cod or Salted Cod Fritters are delicious, flavorful, and crispy fritters made with soaked codfish or salted cod, a classic regional recipe from Calabria. Being Calabrian, I often prepare this dish, especially as a Christmas appetizer. My family loves it and it’s also appreciated by children.
It’s a simple recipe prepared with a batter of cold water, flour, herbs, and pieces of soaked codfish or salted cod.
To get very tasty and delightful fritters, just fry them in hot oil in a pan. If you prefer a lighter version, but equally good, just bake them in the oven.

Ingredients for Cod or Salted Cod Fritters

  • 5.3 oz Cod or Salted Cod
  • 3/4 cup Semolina Flour
  • 2/3 cup Cold Water
  • 1 oz Grated Grana Padano
  • 1 bunch Parsley
  • to taste Salt
  • to taste Peanut Oil

Preparation for Cod or Salted Cod Fritters

  • Wash the fillets of soaked cod or salted cod, remove the skin and cut into small pieces, place in a bowl and add the grana, the clove of garlic and the chopped parsley, the cold water (if sparkling, better), the salt and the flour.

  • Mix and blend the ingredients well to form a soft mixture, not too liquid nor too dry.
    Pour the oil into a pan and bring it to the right temperature, spoon the mixture in, flatten with the back of the spoon, and cook the fritters.

  • Brown the fritters well, turn them on both sides, and then drain on absorbent paper.
    Once ready, serve the fritters hot.

For baked fritters: it’s better to add an extra tablespoon of flour to the mixture, spoon it into a hot oven at 350°F for about 10 minutes until they become golden, turning them during cooking.

  • Can I add chopped garlic to the mixture?

    Yes, of course, you can add it. I love it, but my children like it less.

  • Can I cook them in an air fryer?

    You can make them by adding a little more flour for a firmer dough, or using baking paper, cook at 350°F for about 8-10 minutes, turning them on all sides, but they won’t have the same result as frying in oil.
