Ingredients for the Truffles

  • 6.7 oz ladyfingers
  • 8.8 oz mascarpone
  • 1/4 cup cup coffee
  • 3 1/2 tbsp sugar
  • to taste unsweetened cocoa powder

Steps for the Truffles

  • Pulverize the ladyfingers using a mixer, or place them inside a plastic bag and hit with a rolling pin until they become crumbs.
    Pour the ladyfinger powder into a bowl, add the coffee, previously prepared and cooled, the sugar, and finally the mascarpone. Mix the dough well first with a spatula and then with your hands.
    Let the mixture rest in the fridge for about 30 minutes. If you’re in a hurry, you can put it in the freezer or prepare it and store it in the fridge the night before.

  • After resting, take the dough from the fridge; it should be well compacted and homogeneous. Form balls with your hands and then roll them in the unsweetened cocoa powder.
