The creamy rice and chickpea soup is a perfect winter dish, ideal for both lunch and dinner. It’s rich, complete, and healthy, but also goes well served lukewarm for other seasons.
A simple rice soup that, with the addition of previously cooked chickpeas, becomes a truly tasty and nourishing dish, as well as creamy: a real comfort food.
There are numerous recipes and variations for preparing rice and chickpea soup. Some prepare the chickpeas with a basic onion and herb sauté, some cook the rice directly in the pot with the chickpeas halfway through cooking; I propose mine without sautéing, very light with chickpeas boiled in water and herbs.
Naturally, you can prepare this dish according to your habits, and if you have little time, for this recipe, you can use canned chickpeas.

- 3/4 cup Carnaroli Rice

Preparation for the creamy rice and chickpea soup
Start the preparation of the soup by cooking the chickpeas, which should be soaked in water the night before.
For the recipe and tips on cooking chickpeas, click Chickpea Soup without Sauté otherwise you can always use those packaged in glass jars.In a pot, bring water to a boil, add salt, and then cook the rice for about 15 minutes, I used Carnaroli.
Meanwhile, while the rice is cooking, pour half the chickpeas into the blender cup and blend them until they become creamy.After cooking, drain the rice, add it to the pot with the chickpeas, also pour in the blended ones, cook for a few more minutes while mixing everything well!
Pour the hot soup into bowls, drizzle with a little olive oil, small pieces of fresh sage and serve!
