Ingredients for the Croquettes with Dried Fava Bean Puree

  • 7 oz Fava Bean Puree
  • 1 Egg (large)
  • 1.5 oz Grana Padano PDO (grated)
  • 1 oz Breadcrumbs
  • 1.75 oz Provola Cheese
  • to taste Salt
  • to taste Olive Oil
  • to taste Seasoned Breadcrumbs (dry)

Preparation Steps for the Croquettes with Dried Fava Bean Puree

  • For preparing the dried fava bean puree croquettes, I used leftover dried fava bean puree, a typical creamy first course from the south.
    So to the leftover, add the egg, salt, grated Grana Padano, and breadcrumbs.

  • Mix and combine all the ingredients well. If the mixture is too soft, add more breadcrumbs.
    Now prepare and shape the croquettes: take a piece of the mixture, spread it with your hands, and then stuff it in the center with a piece of provola cheese.

  • Roll and shape them with your hands, then roll them in a seasoned breadcrumb mix and proceed to cooking.
    Place the croquettes on a non-stick baking tray, drizzle with some oil, and then bake.

  • COOKING
    Bake the croquettes in a preheated oven at 356°F for about 15 minutes, turning during cooking for an even golden color. Remove from the oven and serve hot.
    If you prefer, you can also fry the croquettes in hot oil in a pan.
