- 1/2 cup butter
- 1/2 cup sugar
- 2 eggs (medium)
- as needed orange or lemon zest (grated)
- 1/2 teaspoon baking powder (scant)
Tools
- 1 Stand Mixer
- 1 Rolling Pin
- 1 Parchment Paper
- 1 Cookie Cutter bunny cutter
- 1 Baking Tray
- 1 Oven
Steps
In the stand mixer bowl, or in a bowl with a hand spatula, work the softened butter with the sugar using the K-beater on low speed, then add the eggs and the grated zest of orange or lemon, working it all until a cream forms.
Finally, add the sifted flour along with the baking powder, working quickly until the liquids are well absorbed. Pour the dough onto a work surface and knead it further to form a soft but dry dough.
Let the dough rest covered with plastic wrap in the refrigerator for about 20 – 30 minutes.Take the shortcrust pastry out of the fridge and roll it on a floured surface using the rolling pin to a thickness of about 1/8 inch. Use a bunny-shaped cookie cutter to cut out the shapes for the cookies.
Place the bunny cookies on a baking tray lined with parchment paper, press a few colorful candies for the eye shape.
Bake the cookies for about 12 – 15 minutes in a preheated oven at 350°F, being careful not to let them darken too much.
The baking time depends on the thickness and also on the power of your oven; you’ll know they are ready by checking visually.
Once baked, remove them from the oven, let them cool on a wire rack and then sprinkle with powdered sugar.
