Finely chop the onion, peel the garlic clove, and let them soften in a skillet with a bit of extra virgin olive oil over low heat until they turn golden.
Add the cherry tomatoes, washed, dried, and quartered, and sauté well for a few minutes. Pour in the tomato sauce, salt, a few basil leaves, a splash of water, and cook for about 10 minutes. Finally, add the eggs, making sure they don’t break and spacing them apart. Add salt, and if you prefer, add some slices of provola cheese and cover with the lid.
Let them firm up for the necessary time, avoiding overhardening the yolks.
Turn off the heat, let them rest for a few minutes, add plenty of basil leaves, and serve hot with a slice of bread.
Anna recommends…
Eggs with tomatoes are excellent both with canned tomatoes and fresh ones, although with fresh tomatoes, in summer, they are truly unbeatable: color, fragrance, and flavor are at their peak when the tomato is in season, and they become irresistible.
Add provola cheese or cheese for an even more delicious and stringy dish.
Eggs with tomatoes should be served immediately!
