Grilled Corn with Parmesan

Grilled Corn with Parmesan is a delicious recipe that both adults and children love.
The corn cobs served this way are very tasty because they are accompanied by parmesan and a mayonnaise sauce scented with basil and lime to give these corn cobs an extra touch of flavor.
My family loves them, and when it’s the season, I often cook them. They bring back childhood memories, as I used to eat them both boiled and grilled on the barbecue at my grandmother’s, and they tasted completely different!
We used to pick these corn inflorescences from the cornfield, but today we buy them from the greengrocer or supermarket.
If you love them as much as I do, follow the recipe; you can also opt for simplicity by seasoning them with a pinch of salt and melted butter, or accompany them with more elaborate sauces.

Ingredients for Grilled Corn with Parmesan

  • 3 Corn cobs
  • 1 oz Grated Parmesan cheese
  • 2 tbsps Mayonnaise
  • 1 sprig Basil
  • to taste Olive oil
  • to taste Salt
  • 1 Lime

Preparation for Grilled Corn with Parmesan

  • Clean the corn cobs well, remove the pointed end, and blanch them for 10 – 15 minutes in salted boiling water, depending on the size of the cobs.
    Drain them, dry them well, and cook them on the grill or electric griddle for about 15 – 20 minutes, turning them occasionally.

  • You can make the mayonnaise sauce at home, search for mayonnaise recipe on Google, or use store-bought.
    Wash the lime and squeeze a few drops into a tablespoon, then mix it with the mayonnaise, add some torn basil leaves and a drizzle of oil, mix well and serve in small bowls.

  • Spread half of the grated Parmesan on a plate, drizzle with a little oil and some basil leaves.
    Remove the corn cobs from the grill and, while still warm, roll them in the plate with Parmesan to season them.
    Stick skewers in both ends and place them on a serving dish.

  • Finish with the remaining grated Parmesan, fresh basil leaves, lime wedges, and serve them on the table accompanied by the mayonnaise sauce.

Tips and Variations

For those with limited time, you can buy fresh and whole yellow corn cobs already cleaned of leaves and filaments, or pre-cooked vacuum-packed.
Corn cobs are also great served with tzatziki sauce

If the corn cobs are small and tender, you can skip the water cooking; you can also choose steam cooking.
