Halloween peanut butter pumpkin cookies are simple shortbread cookies shaped like pumpkins filled with creamy peanut butter.
They are simple and quick to make, just get a pumpkin-shaped cutter and pair the cookies two by two, a base and a carved one to highlight the filling.
Halloween is approaching and among trick or treat for this day they are perfect to fill the cookie jar for snack time and breakfast, and to offer to your little friends or relatives.
I used peanut butter for the filling but you can also fill them with orange or peach jam.

Ingredients for Halloween Peanut Butter Pumpkin Cookies
- 2 cups all-purpose flour
- 6 oz butter (softened)
- 1/2 cup sugar
- 1 egg (medium)
- 1/2 teaspoon baking powder
- 1 pinch salt
- 1/2 lemon zest (or grated orange zest)

- as needed powdered sugar

Preparation for Halloween Peanut Butter Pumpkin Cookies
In the bowl of a stand mixer or on a work surface by hand, mix the softened butter with the sugar, add the egg and the grated lemon or orange zest.
Work and blend the ingredients well, then add the flour and baking powder and work the dough quickly.
Form a dough ball, wrap it in plastic wrap or parchment paper and let it rest in the refrigerator for at least 20 minutes, in the least cold part!Take the dough from the fridge, roll it out with a rolling pin on a floured surface or on parchment paper, use the pumpkin-shaped cutter to make many little pumpkins that you place on a baking sheet lined with parchment paper.
Leave one cookie whole and one carved to then fill and pair.
Bake the cookies in a preheated oven at 350°F for about 10-12 minutes.Baking time depends on the power of your oven, when they are well golden brown, take them out.
