Preparation of lactose-free Christmas cookies
In the mixer bowl or in a bowl with hand-dough, work the room-temperature butter, in pieces, with the sugar until forming a cream. Continue to work and add the eggs and grated zest.
Finally, add the sifted flour with baking powder, setting aside 50 grams, knead everything quickly, and then divide the dough into two portions.
In the white dough, add the remaining flour, in the other dough, add the cocoa powder while working.Take the doughs out of the fridge and roll them out on two separate sheets of parchment paper, about 0.4 inches thick, then use various cutters to create cookies shaped like trees, stars, hearts, intertwine and join the two colors forming sticks.
Make the shapes you like best.
If you want filled cookies, pair the bottom layer whole and the top layer with a smaller star or heart cutter.
Place all the cookies on a baking sheet lined with parchment paper and then transfer to a preheated oven.Bake the cookies in a preheated convection oven at 356°F for about 12-15 minutes, adjust based on your oven’s power if removing earlier. The cookies should be slightly golden, then take them out and let them cool.
