The light coffee cream without fat or spumone is a very tasty dessert made with very few ingredients, it is soft, velvety, and enveloping with the delicious aroma of coffee!

The light coffee cream (or coffee spumone) is simply made with coffee, cold water, and powdered sugar and is excellent by the spoon to delight us on hot days without adding many calories.
For this recipe, you can use either normal espresso, moka, or decaffeinated coffee, even instant coffee can be replaced with barley, and with electric whisks in 10 minutes you will have the same result of a soft and velvety cream.

To ensure success, the liquids must be very cold and icy.
In a well-chilled bowl, pour the powdered sugar (I recommend 100g, but if you like it very sweet, add more),
the instant coffee, the very cold and icy water, and the always very cold and icy coffee. I suggest putting them in the freezer for at least 10 minutes before using.With the electric whisks start working everything, first at low speed, then continue at maximum speed until the mixture starts to become soft and frothy.
In place of the whisks, you can also use a bimby or kenwood using the whisk to beat the cream well.At first, the mixture is quite liquid, but continue to whip at maximum power until it thickens, sometimes it becomes creamy in 5 minutes, other times it takes up to 10 minutes, depending on the power of your appliance.
As soon as the light coffee cream without fat becomes nicely frothy and velvety, you can serve it immediately or keep it in the fridge covered with cling film until ready to serve. The colder it gets, the more delicious it becomes!
Serve the coffee cream in small cups, cups, or glasses, garnish with coffee beans and a sprinkle of instant coffee or bitter cocoa.

The amount of sugar should be personalized to your taste; if you want a less sweet cream, reduce the grams, if you want it sweeter, add more.
