- 1 Onion

- 4 tbsp Grated Grana Padano

Preparation for the light frittata with pumpkin and leek
For the preparation of the frittata, clean and wash the pumpkin, then cut it into small cubes, place it in a bowl, add the leek sliced thinly and the onion also thinly sliced. Finally, add the eggs, milk, salt, and Grana, mix and blend everything well.
Line a baking dish with parchment paper, grease it with a little oil and then pour the mixture. Place the dish in a preheated oven.
Bake the frittata at 392°F for about 15 minutes. Adjust cooking time based on your oven’s power; the frittata is well cooked when it has a nice golden appearance.Remove the frittata from the oven, cut into wedges, and serve hot. According to your taste, it can also be eaten cold the next day, perfect for a work lunch break.
