  • 1 Onion

Preparation for the light frittata with pumpkin and leek

  • For the preparation of the frittata, clean and wash the pumpkin, then cut it into small cubes, place it in a bowl, add the leek sliced thinly and the onion also thinly sliced. Finally, add the eggs, milk, salt, and Grana, mix and blend everything well.

  • Line a baking dish with parchment paper, grease it with a little oil and then pour the mixture. Place the dish in a preheated oven.
    Bake the frittata at 392°F for about 15 minutes. Adjust cooking time based on your oven’s power; the frittata is well cooked when it has a nice golden appearance.

  • Remove the frittata from the oven, cut into wedges, and serve hot. According to your taste, it can also be eaten cold the next day, perfect for a work lunch break.
