Meat tortellini with pumpkin cream and sage and added smoked scamorza are a creamy and enveloping first course, the delicate pumpkin cream and the more decisive taste of the scamorza and sage make this dish very inviting.

It’s a quick recipe, the tortellini need little cooking, and the sauce is also ready in less than 10 minutes.

This is the ideal dish for the arrival of cooler days and is perfect for autumn both for the colors and flavors, an escape for a tasty dish but without spending too much time at the stove.

Ingredients for the Meat Tortellini with Pumpkin Cream and Sage

  • 10.5 oz Tortellini
  • 5.3 oz Pumpkin
  • 2 slices Smoked Scamorza
  • 6 leaves Sage
  • 1 Onion
  • 1 tbsp Breadcrumbs
  • 2 tbsps Grated Grana Padano
  • to taste Olive Oil
  • to taste Salt
  • to taste White Wine

Preparation for Meat Tortellini with Pumpkin Cream and Sage

  • Peel the pumpkin, wash it and then cut it into small cubes.
    In a pan, pour the chopped onion, a little olive oil and sauté for a few minutes, add the pumpkin cubes and half of the chopped sage leaves, mix and brown everything well.

  • Pour 2-3 tablespoons of white wine and let it evaporate, then salt, pour a ladle of water and cook for about 10 minutes.

  • At the end of cooking, set aside some pumpkin cubes and coarsely blend the rest with a mixer, add the scamorza cut into small pieces, breadcrumbs, and Grana Padano, mix the ingredients well.

  • In a pot, bring water to a boil, salt it and cook the meat tortellini for the minutes indicated on the package, mine took 3 minutes, drain them leaving a ladle of the cooking water, add them to the pan with the sauce.

  • Stir and cook for a few more minutes with the cooking water, once mixed, sprinkle with Grana, add more chopped sage leaves and serve hot.
