Mixed Salad with Added Avocado

Summer, salad time and among my favorites is this mixed salad with added avocado, shrimp, arugula, mozzarella, and cherry tomatoes, a fresh and quick recipe to prepare.
It’s ideal for these hot sultry days without spending too much time at the stove, a rich and tasty salad with fresh ingredients perfect also for lunch breaks at work.
The nice thing about this mixed salad is that it can be modified as desired, making it a simple side dish, or a flavorful main course, by enriching it with many different ingredients, you can add: nuts, fresh fruit, seeds, croutons, and much more.
The choice is yours, add or remove some ingredients according to your taste.

Ingredients for Mixed Salad with Added Avocado

  • 12 Shrimp
  • 2 Mozzarella Balls
  • 10 Cherry Tomatoes
  • 1 Avocado
  • oz Arugula
  • 3 tbsps Corn
  • to taste Salt
  • to taste Extra Virgin Olive Oil
  • to taste Basil

Preparation for Mixed Salad with Added Avocado

  • First, clean the shrimp and then steam them in the basket for about 10 minutes.
    Meanwhile, wash and cut the cherry tomatoes in half and place them in a salad bowl, also add the washed and dried arugula.
    Wash the avocado, cut it in half, remove the pit and slice it.

  • When the shrimp are cooked, let them cool slightly, then peel them and add them along with the other ingredients in the salad bowl.
    Also add the sliced mozzarella and avocado, season with olive oil and salt, mix well and serve in individual bowls.
