Mixed Salad with Vegetables and Cottage Cheese

The mixed salad with vegetables and cottage cheese is a fresh summer dish rich in flavor and color, perfect as a side dish but also to enjoy on its own for a simple and light meal.
A quick dish that can be combined and personalized with many types of vegetables according to your taste, I used lamb’s lettuce, avocado, cherry tomatoes, onion, corn, and then enriched with cottage cheese for a more complete meal.
In the south, the days are still very hot and summery, and these quick and fresh dishes are preferred, especially by those who work and have little time in the kitchen.

Ingredients for the Mixed Salad with Vegetables and Cottage Cheese

  • 8 leaves Tender Variegated Lamb's Lettuce
  • 8 Cherry Tomatoes
  • 1 Avocado
  • 1 Red Onion
  • 3 tbsps Canned Yellow Corn Kernels
  • 3 tbsps Cottage Cheese
  • to taste Salt
  • to taste Olive Oil

Preparation for the Mixed Salad with Vegetables and Cottage Cheese

  • Wash and spin-dry the lamb’s lettuce, peel and slice the avocado, wash, dry, and halve the cherry tomatoes.
    Take a serving plate, arrange the lamb’s lettuce leaves, avocado slices, and halved cherry tomatoes.

  • Enhance the dish with thinly sliced onion rings, scattered corn kernels, and cottage cheese.
    Finish and dress the salad with a pinch of salt and a drizzle of extra virgin olive oil, then serve.
