I still remember the aroma of these cutlets when my grandmother used to make them, golden and tasty.
In the south, our meat cutlets, whether they are beef, chicken, or others, are not just breaded with breadcrumbs but include a mix of garlic, parsley, and grated cheese varying from Grana, Pecorino, to one with black pepper, making them much more flavorful.
I used veal slices, but you can use different meat. I opted for oven cooking with little oil, making them very light, but if you prefer them fried, you can cook them in a pan with extra virgin olive oil or peanut oil.

- 4 slices veal meat
- 2 small eggs
- 1 cup Breadcrumbs
- 1/3 cup Grated Grana Padano
- 1 clove Garlic
- 1 sprig Parsley

Preparation for Oven-Baked Cutlets with Flavorful Breadcrumbs
Start by preparing the breadcrumbs mix, make a good batch and store it in the fridge or freezer as needed.
In a bowl, combine the breadcrumbs, grated Grana, garlic clove, and chopped parsley. Add salt, mix, and blend the ingredients well.
Find flavored breadcrumbs mix here for various coatings, fillings, and gratins.Take the meat slices, remove any external fat and nerves. If you like them thick, leave them as is, otherwise, pound them slightly with a meat tenderizer to thin them a bit.
In a bowl, beat the eggs with a fork, dip the meat slices on both sides, then pass them through the breadcrumb mix, turn, and press to adhere the coating well. If you prefer a thicker coating, repeat this step
Place the breaded meat slices on a baking tray lined with parchment paper and drizzled with oil. Sprinkle the cutlets with a little more oil and bake.
Bake the meat cutlets in a preheated oven at 350°F for about 15-20 minutes, depending on the thickness of the meat. Mine were thin, turn them during cooking to have them golden on both sides.
You can also cook the cutlets in an air fryer at 400°F for about 10-15 minutes. Spray with oil, turn them during cooking, at least 5 minutes per side, adjust based on your appliance’s power, check carefully during cooking.
When well cooked and golden, plate and serve them with a fresh salad or fried or baked potatoes.
Tips and Variations
You can also prepare the cutlets with slices of chicken, turkey, or pork.
