Persimmons stuffed with yogurt and chocolate chips a simple and fragrant spoon dessert, a quick and light autumn dessert, enriched with almonds and crumbled amaretti.

My father has a beautiful tree that gives us many delicious persimmons every year, many love to enjoy them freshly picked from the tree with a spoon, but this sweet fruit offers many more possibilities, so being very greedy I also use them a lot for preparing desserts, which you can find here.

This stuffed persimmons dessert that I recommend today is very quick and prepared in a few minutes, ideal for an end of meal so you bring both dessert and fruit to the table, but it is also perfect for a sweet snack.

It is certainly a dessert that will surprise you for its fragrance, colors and textures; and you can always customize it according to your taste, I used very light yogurt but you can replace it with mascarpone cream, meringue, whipped cream, your choice!

Ingredients for persimmons stuffed with yogurt and chocolate chips

  • 2 persimmons
  • 4 tablespoons plain yogurt
  • to taste ground cinnamon
  • to taste brown sugar
  • to taste blanched almonds
  • 3 amaretti (dry)
  • to taste chocolate chips

Preparation for persimmons stuffed with yogurt and chocolate chips

  • Take two persimmons not very ripe, they must be firm, cut them in half, put a pinch of brown sugar on each fruit.
    Cook in the microwave for 2 minutes at 900 power to slightly soften the fruit. If you don’t have a microwave, use a regular oven, increasing the cooking time to 5 minutes.

  • After cooking, soften the pulp with a teaspoon, gently mash it, fill each fruit with yogurt, add the cinnamon, chocolate chips, almonds, and some crumbled amaretti.

  • Bake in the oven to brown the almonds and give the dessert an amber color, use the grill for about 5 minutes, or the static oven at 350°F until it changes color.

  • Remove the persimmons stuffed with yogurt and chocolate chips from the oven, let them cool and then serve with some mint leaves, enjoy the fragrance and the different textures, from the softness of the fruit to the crunchiness of the almonds and amaretti!

Tips and Variations

For the preparation of this dessert, you can use either the apple persimmon or the other version, as long as the fruit is firm.
You can stuff the fruit as you like with cream, mascarpone, meringue, or whipped cream.
The dessert is stored in the fridge before serving.
