Here is my pie with strawberry and blueberry jam made with a crispy shortcrust shell covered with strawberry jam and then lots of fresh fruit, white chocolate chips, and mint leaves for decoration.
The pie is really good, besides being nice to look at, it is fresh and colorful and is perfect for any sweet break: great for breakfast, after a meal, or as a snack!

Steps for the Pie with Strawberry and Blueberry Jam
In a bowl, add the sifted flours and baking powder, sugar, lemon zest, and finally the softened butter in pieces. Mix well until you get a sandy mixture.
Finally, add the egg and milk, mix, and work the dough with your hands until you obtain a firm and homogeneous shortcrust.
Cover with plastic wrap and let it rest for 10 – 15 minutes in the refrigerator.In the meantime, preheat the oven to 350°F, wash and dry the fruit and mint leaves, and also prepare the jam jar.
For the pie, you can use a large mold 28-30 cm or two small molds 22-24 cm. I made two!
Take the shortcrust from the fridge, divide the dough into two portions, roll out with a rolling pin into a thin sheet, and cover the mold, cut off the excess dough, shape the edges, and prick the base with a fork.
Fill with a little jam and bake in a preheated oven at 350°F for about 10 minutes on the lower part of the oven and the other 8 minutes on the upper part.
The cooking time varies based on the power of your oven.
Then prepare the other pie as before.After baking, let the pie cool a bit, remove it from the mold and place it on a serving plate, add more jam and then decorate as you like with fresh fruit, add the chocolate chips, the fresh mint leaves, and then serve.
Storage and Variations
The pie keeps fresh for about 2 days.
