Pineapple Ring Cake

Ingredients for the Pineapple Ring Cake

  • 2 cups All-purpose flour
  • 7/8 cups Sugar
  • 4 Eggs
  • 10 tbsp Butter
  • 1 cup Pineapple yogurt (or plain)
  • 1 packet Baking powder
  • 1 can Syrupy pineapple
  • to taste Lemon zest
  • 1 sprig Mint
  • to taste Powdered sugar

Preparation for the Pineapple Ring Cake

  • For preparing the cake, you can use a stand mixer, the thermomix, an electric whisk, or by hand. Meanwhile, preheat the oven to an initial temperature of 320°F.
    Proceed with any appliance following these steps:
    start whipping the eggs with the sugar, add the grated lemon zest, the yogurt, always working well with a whisk, then the soft butter, leaving some for buttering the pan, sifted flour, and lastly the baking powder, mixing it well into the batter, which should be soft and creamy.

  • Pour half the batter into a buttered and floured ring cake mold, place pieces of syrupy pineapple in the center, leaving some slices for the final decoration, pour and cover with the remaining batter and bake.
    Bake the cake at 356°F fan for about 25 – 30 minutes, this also depends on the power of your oven.
    After 25 minutes, do the toothpick test, if it comes out dry remove from the oven, otherwise extend the baking time.

  • Once removed from the oven, let the cake cool for a few minutes in the mold, then flip it onto a serving plate and decorate the top with pieces of pineapple, other fruit of your choice, and some mint leaves, sprinkle with powdered sugar, slice and serve.
