- 1 roll Puff Pastry
- 1.1 lbs Turnip Greens
- 3 slices Cooked Ham
- 3.5 oz Provola Cheese

- 1 oz Grana Padano PDO (grated)
- 1 clove Garlic

Preparation for the Puff Pastry Roll with Turnip Greens
To prepare the puff pastry, we start by cooking the turnip greens. Clean well, take the tender leaves and the tops, wash them well under running water, then cook them in a pan with a generous half glass of water and a bit of salt for about 10 minutes.
Once they are dry from their cooking water, sauté them in a pan for a few minutes with a clove of garlic and olive oil. Open the puff pastry roll, place it with all the parchment paper in a rectangular baking tray and prick the bottom with the prongs of a fork.
Sprinkle with breadcrumbs and a bit of grated Grana to absorb moisture, then pour the sautéed turnip greens over the pastry, add slices of ham and provola cut into pieces, and another sprinkle of Grana.
Roll up the pastry with the help of the parchment paper, seal the ends well, then transfer it to a baking tray, and place it on the lowest part of the already preheated oven at 392°F (200°C).
Bake the puff pastry roll in a fan oven for about 10 minutes, then lower the temperature to 356°F (180°C) and continue cooking for another 20 minutes or so. Transfer the tray to the highest rack.Of course, the baking times vary by a few minutes depending on the power of your oven.
When the pastry is golden and flaky, it’s ready to be served.
Take the roll out of the oven, let it cool slightly, then slice and serve!
