Start by pitting the olives; once the pit is removed, they weigh about 2 oz. Then, rinse the capers well if they are salted.
Take an electric chopper, add the pitted olives, capers, and a tablespoon of oil, and blend everything well until it becomes a coarse creamy mixture.In a bowl, combine the flour, softened butter, egg, Grana cheese, a pinch of salt, and a pinch of yeast. Mix the ingredients, add the blended mixture, and quickly work the dough.
The dough should be soft but dry; dust with flour and let it rest in the fridge for about 20 minutes.Roll out the dough with a rolling pin into a rectangular sheet and use a cookie cutter to shape the biscuits, then place them on a baking sheet lined with parchment paper.
