Savory Puff Pastry Pie with Vegetables and Ham

Savory puff pastry pies are perfect for all seasons, always welcome and easy to prepare. Just buy a ready-made roll and fill it with whatever you prefer according to the seasons. You can use lots of vegetables, cold cuts, cheeses based on your tastes.


These days, I prepared this SAVORY PIE with puff pastry, vegetables, and ham, a very simple recipe that I filled with some cooked leftovers I had in the fridge: pumpkin, potatoes, zucchini, ham, and lots of provola cubes to make it even tastier and gooey!

It takes little to prepare it and serve it as a main course for lunch or dinner, with family or friends, but also perfect for a dinner party or buffet!

The savory pie is delicious right out of the oven but also cold. If there is a little left over, we can store it in the refrigerator well covered and eat it the next day. Heating it first in the oven or air fryer or just letting it temper a bit at room temperature.
Nothing is ever thrown away because it is liked in any case.

Ingredients for the Savory Pie

  • 1 roll puff pastry (round)
  • 2 zucchini (medium)
  • 2 potatoes (small boiled)
  • 4 pumpkin slices (grilled)
  • 2 slices cooked ham
  • 70 g provola
  • 4 tablespoons breadcrumbs
  • 2 tablespoons grated Parmesan
  • to taste olive oil
  • to taste salt

Steps for the Savory Pie

  • To fill the savory pie, I used some already cooked leftovers: 2 boiled potatoes, 2 zucchini in sautéed slices, and 4 slices of grilled or oven-baked pumpkin.

    Prepare and cook these ingredients first. Boil the potatoes, then mash them and season with oil and salt. Sauté the sliced zucchini with a drizzle of oil and salt for about 7 minutes, and cook the pumpkin slices in the oven or on the grill.

  • Open the roll of puff pastry, place it on a mold with all the parchment paper, prick the base with a fork, then sprinkle half of the breadcrumbs and grated Parmesan on the bottom.
    Start filling the pastry with the sautéed zucchini slices, mashed potatoes, chopped pumpkin, and finally the ham and provola cubes.
    Drizzle with a little oil and sprinkle the surface with the remaining breadcrumbs and Parmesan.
    Fold the edges of the puff pastry inward, then transfer to a preheated oven at 400°F (200°C), on the lower part of the oven.

    If you prefer, you can brush the edges with beaten egg. I didn’t do it because I was in a hurry.

  • Bake the puff pastry savory pie in a ventilated oven at 400°F (200°C) for about 10 minutes, then lower the temperature to 350°F (180°C) and continue baking for another 20 minutes.
    Halfway through cooking, move the tray up one level to achieve a good gratin. Naturally, the times may vary by a few minutes depending on the power of your oven.
    When the pie is golden brown and flaky, it’s ready to be served.
    Take the savory pie out of the oven, let it cool slightly, then slice and serve!

Storage, Tips, and Variations

The puff pastry can be replaced with whole wheat pastry or shortcrust pastry, which can also be homemade. You can also use a rectangular mold and pastry.

The puff pastry can be stored in the fridge for a few days, served at room temperature or warmed up first.

The savory pie can be filled with either white or green zucchini, you can replace the ham with speck, bacon, and the provola with another cheese, excellent also taleggio or scamorza.
If using mozzarella, drain it well before use.

    Yes, certainly, whole wheat is fine too, or if you prefer, shortcrust pastry.
