Ingredients for Savory Pumpkin and Brie Fritters

  • 3/4 cup Pumpkin Puree
  • 1/3 cup Grated Parmesan
  • 1.8 oz Brie (cheese)
  • 1 Egg (medium)
  • 3/4 cup Flour (semolina regrind)
  • 1 sprig Rosemary
  • 2 tsp Instant Yeast for Savory Preparations
  • to taste Salt
  • to taste Nutmeg
  • to taste Peanut Oil

Preparation for Savory Pumpkin and Brie Fritters

  • Start with the pumpkin for the fritters. Clean the pumpkin, about 6 oz., cut it into pieces and then cook it in the microwave, covered with plastic wrap, for about 7 minutes. You can also do this on the stove in a pan.

  • When the pumpkin is soft and cooked, mash it well with a fork until it becomes puree, and let it cool, even in the fridge.
    Meanwhile, prepare the other ingredients.

  • Pour 3/4 cup of puree into a bowl, add the egg, Parmesan, salt, a pinch of nutmeg, flour, and yeast, mix well then add the cheese cut into pieces and the rosemary.

  • Mix it well; the mixture should be soft and slightly sticky. Take a small pot, pour in some peanut oil, and bring it to medium temperature.

  • Wet your hands, take pieces of dough the size of a walnut, round them, and then immerse them in the hot oil, turning for a golden and uniform cooking. Cook for about 2 minutes, then use a slotted spoon to remove the fritters and drain them on absorbent paper.

  • Continue until all the dough is used up; the oil should not be too hot but at the right temperature, the fritters should brown slowly.
    Once ready and drained, plate and serve them hot.
