The savory table place panettones are made with a leavened dough flavored with grated Parmesan and oregano, in mini portions as an appetizer and place card on each guest’s plate.
They are very good, soft, fragrant, and scenic wrapped in paper and a red ribbon, a very simple and economical recipe.
They can be topped with different ingredients according to your taste; I preferred cheese and oregano, but you can also add olives, cold cuts, sun-dried tomatoes, etc. It’s your choice according to your preferences.
To make the dough soft, I added some milk and organic extra virgin olive oil from Frantoio Gentili.

Ingredients for the savory table place panettones
- 4 cups semolina flour
- 1/4 cup Milk
- 2/3 cup Water
- 3 1/2 tbsp Organic extra virgin olive oil
- 0.28 oz Fresh brewer's yeast
- 4 tbsp Grana Padano (grated)
- 1 tbsp Oregano
- 2 tsp Salt

Preparation for the savory table place panettones
In the stand mixer’s bowl or a hand bowl, crumble the brewer’s yeast and dissolve it with warm milk and water. Add the oil and half the flour and start kneading well with the hook, at speed 3-4, or energetically by hand.
Continue working and add the grated Parmesan, oregano, salt, and the remaining flour until you get a good soft but dry and elastic dough; add more flour if needed.
Grease the aluminum molds with oil or use paper ones, take small pieces of dough, and fill them halfway, leaving space for rising.
Let rise until they double in volume and reach the edge.When the panettones are sufficiently risen, brush them gently with oil and add oregano or seeds.
BAKING
Bake in a preheated oven at 350°F for about 20 minutes, in the lower part of the oven, adjust according to your oven’s power; they’re done when they are golden on top.Take the panettones out of the oven, wrap them in paper, tie with a ribbon, decorate with some fresh rosemary sprigs, and add a name card for each guest.
