- 1 Large Sea Bream
- 2 Potatoes
- to taste Oregano
- to taste Salt
- to taste Olive Oil
- 3 tbsp Breadcrumbs
- 1 tbsp Grated Grana Padano

Preparation for Sea Bream Fillets in Potato Crust
Get a fresh sea bream and have it filleted by the fishmonger, you can leave it whole without the bone or divide the two fillets; I preferred to leave the fillets united.
Wash the sea bream well under running water, lay it skin side down on a baking sheet lined with parchment paper, drizzle with a little oil and a pinch of salt and oregano.Peel and slice the potatoes very thinly using a mandoline, (I used this one, very economical and multi-functional) and lay them, slightly overlapping, on the sea bream fillets. Salt, drizzle with a little oil and sprinkle with breadcrumbs and grated Grana Padano.
Add another pinch of oregano and some chopped parsley. Cover and close the fillets with another sheet of parchment paper, rolling the edges well for foil-cooking.Cook the sea bream fillets in a hot oven preheated to 356°F for about 15 minutes. After this time, uncover the top part and cook for another 15 minutes so the potatoes become golden and crispy.
Plate and serve the sea bream fillets hot.

Sea bream is one of the easiest fish to find at the market, but if you don’t find it or it’s not fresh, you can replace it with sea bass or branzino.
The bones of the filleted sea bream can be used to make a good fish stock for a tasty risotto or other recipes.
