Simple Oven-Baked Vegetable Skewers

Simple Oven-Baked Vegetable Skewers are light and tasty, perfect to serve as a side dish or appetizer.

They are simply prepared with slices of seasonal vegetables, seasoned with oil, herbs, and breadcrumbs, then baked, making them truly tasty and perfect for those following a vegan or vegetarian diet.

The skewers can be served hot or cold, and they can be cooked in the oven, on a grill, or on a griddle. They are always colorful and delicious to make in any season with seasonal vegetables, and if you prefer, with pieces of mixed meat!

Ingredients for Simple Oven-Baked Vegetable Skewers

  • 1 small eggplant
  • 1 zucchini
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 5 small tomatoes
  • to taste Breadcrumbs
  • to taste Salt
  • to taste Oil
  • to taste Oregano
  • to taste Basil

Preparation for Simple Oven-Baked Vegetable Skewers

  • To prepare the vegetable skewers, start by cleaning, washing, and slicing the vegetables.

    Remove the ends of the zucchini and cut it into rounds, dividing the larger part into halves.

  • Do the same with the eggplant, cutting it in half and then into small slices, and likewise with the bell peppers, cutting them into small strips.

    If the tomatoes are small, slice them into rounds; otherwise, cut them in half and try to achieve the same thickness for all the vegetables.

  • Take the wooden skewers and start assembling the skewers by threading a piece of different vegetables onto each skewer, alternating colors and varieties.

    Once ready, place them on a baking tray with parchment paper, drizzle with oil, sprinkle with salt, breadcrumbs, and oregano.

  • Bake the rolls in the oven for about 30 minutes at 392°F, turning them for even cooking on all sides.

    When they are well cooked and wilted, add some fresh basil leaves, drizzle with a little oil, and serve.
