Ingredients for the Soft Cake with Fresh Fruit

  • 2 cups all-purpose flour
  • 1 cup fresh cream
  • 3 eggs (large)
  • 3/4 cup sugar
  • Half packet baking powder
  • Half lemon zest (grated)
  • 3.5 tbsps sunflower oil
  • 4 pears (small)
  • 3 apricots
  • 2 peaches
  • to taste cherries
  • to taste powdered sugar

Preparation for the Soft Cake with Fresh Fruit

    Peel and cut the fruit into pieces, set them aside on a plate.
    In a bowl, start whisking the eggs with the sugar, use the electric whisk at maximum power until the mixture is well puffed and foamy.

  • Add the grated peel, the liquid cream, and gradually the sifted flour along with the baking powder, continue to mix, add the sunflower oil, and mix until the mixture is smooth and homogeneous.

  • Pour the mixture into a greased and floured 9.5-inch diameter bundt pan, finish by inserting the fruit pieces, alternating them, then transfer the pan to the oven.

  • Bake the fruit cake in a ventilated oven at 355°F for about 40 minutes or in static mode for 50 minutes.
    Remove from the oven when it is well cooked and golden, adjust the baking time based on your oven’s power if necessary.

  • Remove from the oven and let the cake cool completely before slicing and serving. If you like, you can also dust with powdered sugar to sweeten the slightly tart part left by the apricots!
