Steps for sweet buns stuffed with jam and chocolate
For the preparation of sweet buns, I used the stand mixer, but they can also be kneaded by hand.
In the stand mixer bowl or a regular bowl, crumble the fresh yeast and dissolve it with the milk.
Use the K beater at first for the initial dough.
Add sugar, mix and blend the ingredients by starting the stand mixer, also add the grated orange zest, and continue working the dough by gradually adding the sifted flour, always keeping speed at two and increasing to three for a few seconds.
Remove the K beater and add the dough hook, continue working the dough and add the softened butter at the end.
Continue working for about 8-10 minutes until it is well absorbed; it should be a smooth and elastic dough.
The same procedure can be done by hand using a wooden spoon and working the dough energetically.
Work the dough with your hands and form a dough ball; if necessary, add a few more tablespoons of flour; this depends on the humidity and the brand you use; sometimes it absorbs more, sometimes less.
Let the dough rest for an hour, covered in a bowl or in the same stand mixer bowl.
After rising, divide the dough into equal pieces; I made 20 balls, but it depends on the size you want.
Stuff each ball with a bit of orange marmalade and chocolate chips.
Close and round forming balls that you will place on a baking sheet lined with parchment paper, spaced apart from each other.In a small bowl, heat the two tablespoons of milk with 1 teaspoon of marmalade, then brush the surface of the little brioches with a brush and decorate with chocolate chips.
Let them rise in the turned-off oven until they double in size, about 1 hour.Bake the sweet buns in a preheated 356°F convection oven for about 20 minutes.
Place the baking sheet in the lowest part of the oven for the first 10 minutes and then in the middle rack for the remaining 10 minutes.
Remove the buns from the oven when they are golden brown, let them cool slightly, and if preferred, dust with powdered sugar before serving.
