Ingredients for Tagliatelle with Mushrooms, Pumpkin, and Sausage
- 7 oz Pumpkin
- 7 oz Sausage
- 5 oz Mixed mushrooms
- 1 Onion
- 1 clove Garlic
- 1 glass White wine
- to taste Salt
- to taste Olive oil
- to taste Grated Parmesan cheese
- 1 sprig Parsley
- to taste Tagliatelle

Preparation
Clean and cut the pumpkin into fairly small cubes and set aside.
Clean and scrape the mushrooms very well, then cut them into small pieces.
Peel the onion and chop it finely.
Sauté it in a pan with olive oil and the garlic clove, then add the mushrooms and pumpkin.
Let everything flavor well over high heat, remove the outer casing from the sausage, crumble it, and brown it over high heat along with the pumpkin and mushrooms, then deglaze with the white wine.
Cook over low heat, season with salt and pepper, add a drop of water if necessary, and cook for about 20 minutesCook the tagliatelle or another type of pasta, according to your taste, in plenty of boiling salted water, drain al dente, and then toss with the prepared sauce.
Finish with a sprinkle of grated Parmesan and chopped parsley, and serve hot.
