Vanilla Scented Light Rice Pudding

The vanilla scented light rice pudding is a spoon dessert flavored with vanilla bean and a sprinkle of unsweetened cocoa and cinnamon.
It’s a dessert many of us know and have surely eaten, the classic grandma dessert that she prepared for our snack, which some company then also marketed and can be found in the refrigerated section of supermarkets, but certainly the homemade one is a whole different, much healthier and more genuine thing!
I’ve eaten it too but it was a long time ago, yesterday while browsing the web a bit I came across the recipe from my friend Ana Amalia, a talented food blogger, which you can find on her blog “Non solo le torte di Anna” and that’s how I got the urge to prepare it.
I modified and personalized the recipe with different doses and ingredients, my version is light because being on a diet I replaced sugar with sweetener and whole milk with semi-skimmed milk, but you can follow the normal recipe with sugar .
You can also personalize the dessert making it even more delicious by adding pieces of dark chocolate.

Ingredients for the vanilla scented light rice pudding

  • 1 2/3 cups Semi-skimmed milk
  • 3/4 cup Carnaroli rice
  • 1 Vanilla bean
  • 3 drops Diete.tic sweetener (or 1/4 cup of sugar)
  • to taste Ground cinnamon
  • to taste Unsweetened cocoa powder

Preparation for the vanilla scented light rice pudding

  • In a large saucepan, pour the milk and bring it to a boil with the vanilla bean.
    Slowly sprinkle in the rice and let it cook for about 20 minutes over very low heat, checking and stirring with a wooden spoon from time to time during cooking.
    A few minutes before removing it from the heat, add the sweetener drops or white or brown granulated sugar, let it cook a few more minutes, then turn off the stove.

  • Remove the vanilla bean and pour it into small bowls or glass cups, sprinkle with ground cinnamon and unsweetened cocoa.
    Garnish with some mint sprigs and serve according to your taste, warm or cold!

Tips and Variations

To achieve a creamy result, use good rice such as Carnaroli or Arborio.
You can flavor and personalize your rice pudding according to your tastes, with lemon zest, rum, or vanilla, and also serve and garnish with pieces of dark chocolate.
