You can vary the mixed vegetable velouté with croutons according to your tastes and the vegetables you have available. You can remove or add some vegetables according to your preferences.
For a creamier and more velvety effect, you can add some cooking cream.
The velouté keeps in the fridge in a glass container for one day, and it is also perfect to take to work for lunch
