Almond Pinches.
Simple, fragrant, delicious.
Almond Pinches are typical Sicilian pastries, displayed prominently in every pastry shop next to almond paste, easy to make, with an aroma and almond flavor that will captivate you at the first bite 🙂

Ingredients
- 10.5 oz peeled almonds
- 1.5 cups powdered sugar
- 2.5 oz egg white
- 8 drops bitter almond essence
- as needed powdered sugar (for finishing)

Steps
Blend the almonds with 50g of the sugar in a blender until you get a very fine flour, turn off the blender for a few seconds and then turn it back on several times so as not to heat the blades.
Beat the egg white with a fork until it starts to form some bubbles, it should not whip.
Place the almond flour obtained in a bowl, add the remaining powdered sugar, the almond essence, and the egg white, mix well until you get a well-worked and compact dough, you can also use a stand mixer.Wrap in cling film and put it in the fridge for 1 hour.
WITH BIMBY:
Place the sugar in the bowl, Turbo speed for 30 seconds.
Add the almonds 30 sec./Turbo speed.
Add the egg white and almond essence 30 sec./speed 4.
Place the almond paste on a work surface and knead until you get a homogeneous and compact dough.Put in the fridge for 1 hour.
Preheat the oven to 338°F.
Line a baking sheet with parchment paper.
Divide the dough into 1 oz pieces.
With hands dusted with powdered sugar, form balls.
Roll the balls in powdered sugar, then shape them into pinches with your hands.
Place them on the baking sheet as you go.
Once all the pastries are ready, bake them at 338°F for about 15 minutes, they should lightly brown, adjust according to your oven.
Let them cool well before removing them from the baking sheet, they keep well in a tin box.
