Apple bread is a very different apple cake from the classic apple cakes because the apples, instead of being combined into the batter, are blended and put directly in it. I enriched this cake with lots of walnuts and raisins; the result is fabulous with an ultra-soft and moist base and a crunchy and delicious topping.

Ingredients

  • 3 eggs (large at room temperature)
  • 450 g apples (weighed after peeled)
  • 150 g sugar
  • 270 all-purpose flour
  • 80 g corn oil
  • 1 packet baking powder (16 g)
  • grated zest of one lemon
  • juice of 1 and a half lemons
  • 1 pinch salt
  • 80 g walnut kernels
  • 50 g raisins

Steps

  • Rinse the apples, remove the core, and cut them into pieces (weigh them, they should be 450g).

    Rinse the raisins and soak them in water.

    Preheat the oven to 340°F static.

    Butter a 9.5-inch pan.

    Chop the walnuts and set them aside.

    Put the apples in a blender, add the filtered juice of one and a half lemons, and blend until pureed.

    Also add the oil, eggs, lemon zest, a pinch of salt, and sugar, blend again.

    Also add the flour and baking powder and continue blending.

    Pour the batter into the buttered pan, level it with a spatula, sprinkle the surface with squeezed raisins and chopped walnuts.

    Bake in the lower-middle part of the oven and bake your cake for about 35 minutes. Do a toothpick test in the center, it should come out dry, otherwise extend the baking for a few more minutes.

    Once the cake is cooked, remove it from the oven, let it cool, and then place it on a tray.

    Serve.

    Pour the batter into the buttered pan, level it with a spatula, sprinkle the surface with squeezed raisins and chopped walnuts.

    Bake in the lower-middle part of the oven and bake your cake for about 35 minutes. Do a toothpick test in the center, it should come out dry, otherwise extend the baking for a few more minutes.

    Serve.
