Finally, the summer heat has given way to these fresh autumn days, and what could be better than a warm, steaming little soup? I love them, they are that comfort food that warms the heart and mind, this one is very simple to prepare, light and nutritious, plus it’s economical and perfect for the whole family. Try it, it will win you over at the first taste.

Ingredients

  • 2 potatoes (1.1 lbs)
  • 1 cup pumpkin
  • 1 carrot
  • 1 yellow onion (not too large)
  • 3.5 tbsp tomato passata
  • 2 cups small pasta (like tubetti)
  • Half Parmesan rind
  • parsley (to taste)
  • to taste extra virgin olive oil
  • to taste salt
  • grated Parmesan (to taste)

  • 1 Knife
  • 1 Cutting Board
  • 1 Lid
  • 1 Wooden Spoon

Steps

  • Let’s prepare the broth.


    Peel the potatoes, rinse them, and cut them into cubes.


    Peel the carrot and cut it into cubes.


    Clean the onion and chop it, chop the celery stalk as well.


    Lightly grate the hard part of the Parmesan rind and cut it into cubes.


    Put the chopped vegetables, carrot, and potato cubes in a saucepan, add 1.5 quarts of water, also add the Parmesan rind cubes, the tomato passata, cover with a lid, and bring to a boil.


    Once boiling, start cooking on a very low flame, always covered with the lid.

  • Clean the pumpkin by removing the skin and seeds and cut it into small cubes.

    Add it to the cooking vegetable broth, bring it back to a boil and cook for another 20 minutes.

    At this point, adjust the salt, add a drizzle of oil and a grind of pepper, check if the broth is enough to cook the pasta and remain nice and creamy, otherwise add a bit of water, bring back to a boil, and add the pasta. Cook the pasta for the time indicated on the package.

    At the end, if you like, you can also add some chopped parsley, check the salt.


    Serve the autumn soup nice and hot, everyone can add some grated cheese to their plate if they like, I like it just like that without adding anything else.
