Baked Chicken Roll-Ups

Baked Chicken Roll-Ups are a very easy dish to prepare, fun and delicious, a different way to prepare the classic chicken breast slice, making it very appetizing and appreciated by the whole family.


Baked Chicken Roll-Ups have a filling of ham, scamorza cheese, and creamy cheese and an aromatic and crispy breading. They are perfect for dinner or as a fun main course. Just accompany them with a side dish, and you will have a complete meal that will win everyone over at the first taste!

Ingredients

  • 8 slices chicken breast
  • 8 slices cooked ham
  • 4.2 oz smoked scamorza cheese
  • 2.5 oz gorgonzola (or creamy cheese to taste such as brie, crescenza, etc…)
  • 1 cup breadcrumbs
  • 1 large egg
  • 1 leaf sage
  • 1 sprig marjoram
  • to taste rosemary
  • to taste pepper
  • to taste extra virgin olive oil
  • to taste salt

  • 1 Baking Dish

Steps

  • Let’s prepare the breading:

    Put the breadcrumbs in a mixer, add the sage, marjoram, 2 or 3 rosemary needles (alternatively to fresh herbs, you can add 1 teaspoon of roast seasoning), a grind of pepper, and blend (you can also add parsley, thyme, curry, paprika, or whatever you prefer).

    Pour the breadcrumbs with the herbs onto a plate and set aside.

    Cut the scamorza cheese into 8 large pieces, also divide the gorgonzola (or soft cheese of your choice) into 8 parts.

    On a cutting board, use a meat tenderizer to flatten the chicken slices.

    Now we can prepare our roll-ups:

    Fill the chicken slices by laying them out one at a time on a work surface, cover with a slice of ham, and place a piece of provola and a piece of gorgonzola on one side (you can also add a sage leaf), roll up the chicken slice starting from the side with the cheese filling to form the roll-ups, place it on a tray.

    Proceed in the same way for all the chicken slices, fill them in the same way and form the roll-ups.

  • Now we can proceed to breading.

    Turn on the oven to 356°F static (you can also cook them in an electric fryer).

    Grease a baking dish with some oil.

    Put a little oil in a deep plate and roll each roll-up in the oil to coat it completely, then pass it through the seasoned breadcrumbs prepared earlier to bread it completely.

    Place the roll-up in the baking dish, trying to position the seam side down.

    Bread all the roll-ups in the same way and arrange them in the pan.

    Spray with some oil.

    Beat the egg with a pinch of salt with a fork.

    With the help of a tablespoon, sprinkle each roll-up with the egg.

    Bake in the hot oven at 356°F for about 20 minutes (they should brown).
