Baked Ribs with Potatoes and Mushrooms.

Simple, very tender, and tasty.

The Baked Ribs with Potatoes and Mushrooms are a main dish with a very simple side to prepare. Made this way, the ribs will be very tender and juicy, the potatoes and mushrooms well golden, a very tasty dish perfect for the whole family.

Ingredients

  • 2.2 lbs pork ribs
  • 3 or 4 large potatoes
  • 7 oz fresh mushrooms (or frozen, I used champignons, you can use whichever you prefer)
  • 1 onion
  • Half tablespoon roast seasoning (like Ariosto)
  • 1 leaf bay
  • 1 tablespoon vinegar
  • to taste extra virgin olive oil
  • to taste pepper
  • to taste salt

Steps

  • Take a pot, add plenty of water, and bring it to a boil. Once boiling, add the ribs and a bay leaf, bring back to a boil, and cook them for 50 minutes on very low heat from the boil.


    Meanwhile, while the ribs are cooking, rinse the potatoes under running water, peel them, and cut them in half, then into slices about half an inch thick. Place them in a bowl, cover them with water, and add a tablespoon of vinegar, mix, and leave them like this while the ribs cook, so they lose their starch and won’t stick together during cooking.

    Also clean the mushrooms, use a knife to remove dirt near the stem, and with a damp cloth, clean them by removing any dirt or straw. Slice them and set them aside.

    Peel and slice an onion.

  • Once the cooking time for the ribs is up, preheat the oven to 350°F (static).


    Drain the potatoes well and transfer them to a bowl along with the ribs drained from the cooking water and the onion, sprinkle the seasoning over them, a grind of pepper, add a drizzle of oil, mix well.

    Brush a baking pan with very little oil, put in the crushed garlic clove but do not peel it.


    Place the potatoes and ribs in the pan, arrange everything without piling too much on top of each other.

  • Cover with a sheet of aluminum foil and bake on the lower part of the oven (the shelf just above the base) for 30 minutes.

    After 30 minutes, remove the aluminum foil, shake the pan to mix everything a bit (don’t use paddles too much to avoid crumbling the potatoes).

    Add the mushrooms, shake again to distribute them evenly, check and adjust the salt (the roast seasoning already contains salt), and bake for another 15 minutes, increasing the temperature to 400°F (fan-assisted) and moving the pan to the top shelf, shake the pan after 7 or 8 minutes to mix a bit.

  • Everything is ready when it’s well golden.


    Serve immediately.
