Canadian Apple Cake.
Simple, fragrant, delicious.
I love this Canadian apple cake, it’s among the best I’ve ever tasted, fragrant, very soft, not too sweet, with lots of apples and a delicious crust.
For this simple, genuine, and specially flavored cake recipe, I must thank Mrs. Olivia, whom I met on a cruise and who kindly gave me her delicious recipe 🙂 Try it, it will win you over at the first taste.

Ingredients
- 4 large eggs
- 2 3/4 cups all-purpose flour
- 1/3 cup maple syrup
- 2/3 cup brown sugar
- 2 apples
- 5 oz butter (at room temperature)
- 1 teaspoon ground cinnamon
- 1 pinch salt
- juice of 1 lemon
- grated zest of 1 untreated lemon
- 1 packet baking powder
- 3 tablespoons brown sugar
- 1 tablespoon butter (cold from the fridge)
- 2 apples
- 1 pinch cinnamon
Tools

- 1 Electric Whisk
- 1 Food Processor
- 1 Spatula
- 1 Oven
Steps
Butter a 9.5-inch springform pan and line the bottom with parchment paper.
Peel the 2 apples and slice them, add the lemon juice, mix, and set aside.
Work the butter with brown sugar, grated lemon zest, and cinnamon until creamy, set aside.
Sift the flour with the baking powder.
Preheat the oven to 350°F.
In a large bowl, beat the eggs with a pinch of salt using electric whisks (you can also use a stand mixer), once the mixture is frothy and compact, add the maple syrup, beat again and slowly add the flour with the baking powder, when the mixture is homogeneous, add the butter and beat everything at low speed until smooth.
Turn off the electric whisks and with a spatula, gently fold in the apples with their juice, mixing to combine (it’s okay if the apple slices break a little).
Pour everything into the buttered pan and level it with the spatula.
Wash the other 2 apples well, remove the cores and slice them without peeling.
Decorate the cake with the apple slices arranged in a circular pattern.
With a spatula, work the butter with brown sugar and cinnamon to make a crumbly mixture, sprinkle it over the surface, especially on the apples.
Bake on the lower rack of the oven (just above the base) at 340°F for 45 minutes, testing with a toothpick before removing from the oven.
Let the cake cool well outside the oven and then place it on a platter.
You can enjoy it warm or cold.

Add the maple syrup for 30 sec/speed 4.
Add the flour with the baking powder for 30 sec/speed 2, scrape down the mixture to the center with a spatula, add the butter for 30 sec/speed 2, scrape down again, and work for another 40 sec/speed 1.
Turn off the Bimby and with a spatula, gently fold in the apples with their juice, mixing to combine (it’s okay if the apple slices break a little).
Pour everything into the buttered pan and level it with the spatula.
